Fried Rice
Ingredients:
- 3 cups cooked rice (preferably cold, leftover rice works best)
- 2 tbsp vegetable oil or sesame oil
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 2 carrots, diced
- 1 bell pepper, diced (optional)
- 2 eggs, lightly beaten
- 100g frozen peas (about 3/4 cup)
- 3 tbsp soy sauce (or to taste)
- Salt and freshly ground black pepper, to taste
- 2 green onions, chopped (for garnish)
Instructions:
- Prepare the ingredients: Make sure the cooked rice is cold and separated into grains. This helps to prevent clumping during cooking.
- Heat the oil: In a large skillet or wok, heat the oil over medium-high heat. Add the minced garlic and chopped onion and sauté until fragrant and the onion becomes translucent.
- Cook the vegetables: Add the diced carrots (and bell pepper, if using) to the skillet and cook for 3-4 minutes until they start to soften.
- Scramble the eggs: Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Allow them to cook for a few seconds, then scramble them until fully cooked. Mix the eggs with the vegetables.
- Add rice and peas: Stir in the cold cooked rice, breaking up any clumps with a spatula. Add the frozen peas and cook for another 2-3 minutes, stirring frequently.
- Season the rice: Add the soy sauce and stir well to coat the rice evenly. Taste and adjust seasoning with salt and pepper if needed.
- Serve: Remove from heat and garnish with chopped green onions. Serve hot as a main dish or a side.
Tip: For more protein, add cooked chicken, shrimp, or tofu along with the vegetables. Fried rice is very adaptable, so feel free to use any veggies you have on hand!
