Fried Rice is a versatile and delicious dish that’s perfect for using up leftover rice and vegetables.

Fried Rice

Ingredients:

  • 3 cups cooked rice (preferably cold, leftover rice works best)
  • 2 tbsp vegetable oil or sesame oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 bell pepper, diced (optional)
  • 2 eggs, lightly beaten
  • 100g frozen peas (about 3/4 cup)
  • 3 tbsp soy sauce (or to taste)
  • Salt and freshly ground black pepper, to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Prepare the ingredients: Make sure the cooked rice is cold and separated into grains. This helps to prevent clumping during cooking.
  2. Heat the oil: In a large skillet or wok, heat the oil over medium-high heat. Add the minced garlic and chopped onion and sauté until fragrant and the onion becomes translucent.
  3. Cook the vegetables: Add the diced carrots (and bell pepper, if using) to the skillet and cook for 3-4 minutes until they start to soften.
  4. Scramble the eggs: Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Allow them to cook for a few seconds, then scramble them until fully cooked. Mix the eggs with the vegetables.
  5. Add rice and peas: Stir in the cold cooked rice, breaking up any clumps with a spatula. Add the frozen peas and cook for another 2-3 minutes, stirring frequently.
  6. Season the rice: Add the soy sauce and stir well to coat the rice evenly. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve: Remove from heat and garnish with chopped green onions. Serve hot as a main dish or a side.

Tip: For more protein, add cooked chicken, shrimp, or tofu along with the vegetables. Fried rice is very adaptable, so feel free to use any veggies you have on hand!
