Ingredients:
- 400g pasta (e.g., penne, fusilli, or spaghetti)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 400ml milk (about 1 3/4 cups)
- 200g grated cheese (e.g., cheddar, Gouda, or a mix)
- Salt and freshly ground black pepper, to taste
- A pinch of nutmeg (optional)
- Fresh parsley (optional, for garnish)
Instructions:
- Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
- Make the cheese sauce: In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, whisking constantly, to form a roux. Gradually add the milk while whisking to avoid lumps, and bring to a simmer.
- Add the cheese: Once the sauce has thickened, reduce the heat to low and add the grated cheese, stirring until it melts and the sauce becomes smooth and creamy. Season with salt, pepper, and a pinch of nutmeg if using.
- Combine with pasta: Add the cooked pasta to the cheese sauce and toss to coat evenly. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.
