Ingredients:

  • 2 eggs
  • 300ml milk (about 1 1/4 cups)
  • 100g all-purpose flour (about 3/4 cup)
  • 1/2 tsp salt
  • Butter for frying

Ingredients for the blue cheese filling:

  • 150g blue cheese (ädelost), crumbled
  • 100ml cream (about 1/2 cup)
  • 1 tsp honey (optional, for sweetness)
  • Freshly ground black pepper
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Make the crêpe batter: In a mixing bowl, whisk together the eggs, milk, flour, and salt until you have a smooth batter. Let the batter rest for about 10-15 minutes.
  2. Cook the crêpes: Heat a small amount of butter in a non-stick skillet over medium heat. Pour a small ladleful of the batter into the pan and swirl it around to cover the bottom in a thin layer. Cook for about 1-2 minutes until the crêpe is lightly golden, then flip and cook the other side. Repeat with the remaining batter, stacking the crêpes on a plate as you go.
  3. Prepare the blue cheese filling: In a small saucepan, combine the blue cheese, cream, and honey (if using). Warm over low heat, stirring until the cheese has melted into a smooth, creamy sauce. Add black pepper to taste.
  4. Fill the crêpes: Spread a generous amount of the blue cheese filling over each crêpe and fold it into quarters or roll it up. If you prefer, you can fold them into small parcels.
