Blue Cheese Crêpes

Ingredients:
- 2 eggs

- 100ml cream (about 1/2 cup)
- 1 tsp honey (optional, for sweetness)
- Freshly ground black pepper
- Fresh parsley (optional, for garnish)
Instructions:
- Make the crêpe batter: In a mixing bowl, whisk together the eggs, milk, flour, and salt until you have a smooth batter. Let the batter rest for about 10-15 minutes.
- Cook the crêpes: Heat a small amount of butter in a non-stick skillet over medium heat. Pour a small ladleful of the batter into the pan and swirl it around to cover the bottom in a thin layer. Cook for about 1-2 minutes until the crêpe is lightly golden, then flip and cook the other side. Repeat with the remaining batter, stacking the crêpes on a plate as you go.
- Prepare the blue cheese filling: In a small saucepan, combine the blue cheese, cream, and honey (if using). Warm over low heat, stirring until the cheese has melted into a smooth, creamy sauce. Add black pepper to taste.
