Ingredients:

  • 500g potatoes, peeled and diced into small cubes
  • 1 large onion, finely chopped
  • 200g cooked meat (like beef, ham, or sausage), diced into small cubes
  • 2 tbsp butter or oil (for frying)
  • Salt and freshly ground black pepper
  • 4 eggs (1 per serving)
  • Pickled beets (for serving)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the potatoes: Start by parboiling the diced potatoes in salted water for about 5 minutes. Drain and set them aside to cool slightly. This step ensures that the potatoes will fry evenly and crisp up nicely.
  2. Fry the ingredients: In a large skillet, heat 1 tablespoon of butter or oil over medium heat. Add the diced potatoes and fry until they start to become golden and crispy, about 10 minutes.
  3. Add the onions and meat: Push the potatoes to one side of the skillet, add the remaining butter or oil, and then sauté the onions until they soften and turn golden. Add the diced meat to the skillet and mix everything together. Cook for another 5-7 minutes until everything is heated through and the potatoes are crispy. Season generously with salt and pepper.
  4. Fry the eggs: In a separate skillet, fry the eggs sunny-side up or to your liking.
  5. Serve: Plate up the Pytt i Panna with a fried egg on top. Serve with a side of pickled beets and garnish with fresh parsley if desired.
